I heard you! French onion soup for one.

Man, I LOVE this soup. It always hits. I order it out a lot!

This soup does take a lot of time and attention, but I promise, it’s worth it!

Here’s my one-portion French Onion soup recipe:½ TBSP butter
1 tsp olive oil
½ onion, thinly sliced
Garlic
Dried Thyme
1 TBSP white wine (I used cooking wine, I’ve also omitted when I don’t have it on hand)
Splash of Worcestershire sauce
Salt
Pepper
Bay leaf
1.5 – 2 c beef broth
1 slice of crusty bread (mine was left over from an Italian restaurant)
1/3 c gruyere and mozzarella cheeses (I would normally do just gruyere but didn’t have enough so I mixed the two)

Melt butter and oil together. Add in onions, cook on low until onions are browned (not burnt) usually 30 minutes. Stir occasionally. Add in garlic, Thyme, Worcestershire sauce salt and pepper. Stir. Let cook until garlic is fragrant, about a minute. Deglaze pan with white wine if you have it. Add in broth and bay leaf. Bring to a boil. Reduce to a simmer, let simmer 20-30 minutes. While soup is simmering, tear bread into chunks (easier to eat) and coat with oil. Toast in air fryer or oven for a few minutes. Then add cheese on top. Air fry/ bake at 350 for 4-5 minutes. Then broil for a couple minutes for color. Remove bay leaf, serve soup and place bread and cheese on top. Optionally, you can put the toasted bread and cheese on top of soup and bake/broil all together. My soup dish isn’t oven safe at that high of a temperature so that’s why I separated.
