It has a distinct ammonia to it, so be warned…it will stink your house out! To me though, it’s worth it. Epoisses has a very distinct flavour, that is strong, supremely creamy, buttery and a slight farmyard taste.

This cheese is perfect for baking, as it easily melts, and easily carry’s flavour. With this epoisses I studded it with garlic, rosemary and olive oil. What you end up with is essentially and instant cheese fondue! Now, you can serve this baked cheese epoisses with anything you like, but I have listed some suggestions below.

►1 medium sized garlic clove
