Corners of the pot is a great tip for people just starting to make roux or gravy. I love using a whisk, but it just doesn't dig in those corners. I usually keep a silicone scraper or spoon on hand.

For home sizes,
2 tbsp butter
2 tbsp flour
1 cup stock

veloute with a a good mustard and herbs (obviously some acid as well) makes my toes tingle
If i use ghee can i just add the flour
What if you began with ghee? There’s no water left in ghee.
Cut to the chase and start with ghee.
I like using a spatula with my wisk to check the corners as I add more liquid
