Rustic Leek & Comté Tart 😋
Continuing with seasonal rustic vegetable tarts since you seem to love them 😉
For 1 tart (6–8 servings), you’ll need:
Pastry:
200g wheat flour (T110 used here)
60g very soft salted butter
1 egg
25ml water
1 pinch fleur de sel
Filling:
450g leek whites
1 tbsp olive oil
2 garlic cloves
1 tbsp balsamic vinegar
2 tbsp wholegrain mustard
130g Comté cheese
Fresh thyme
Instructions:
In a mixing bowl, combine all the pastry ingredients and knead until you get a smooth dough ball. Chill in the fridge.
Thinly slice the leeks.
Heat a pan over high heat with the olive oil, add the crushed garlic and leeks, and mix well. Add the balsamic vinegar, then cook over medium-high heat for about 10 minutes, until the leeks are soft (add a little water if they start to stick).
Grate the Comté cheese.
Preheat the oven to 195°C (conventional heat, NOT fan-assisted).
Roll out the dough on a sheet of parchment paper into a circle about 30cm wide.
Place it on a baking tray and prick the base with a knife or fork.
Spread the mustard over the base, leaving a 2–3cm border around the edges.
Add two-thirds of the grated Comté, then the leeks, and finally the remaining cheese on top.
Fold the edges over the filling and bake on the LOWER rack of the oven for 30–35 minutes, until golden brown (you can move it to the top rack for the last 3 minutes if needed).
Finish with fresh thyme and enjoy! 😋
