Ingredients:
Crepe Batter:
• 3 Large eggs
• 500 ml (2 cups) Milk
• 200 g (1.2 cups) All-purpose flour
• 2 tbsp Sugar
• 1/2 tsp Salt
• 3 tbsp Vegetable oil

Filling:
• 400 g (14 oz) Cottage cheese or Farmer’s cheese
• 1 Egg yolk
• 2-3 tbsp Sugar (to taste)
• 1 tsp Vanilla extract

🔹 Resting the Batter: After mixing, let the batter rest for 20-30 minutes. This allows the gluten to relax, making the crepes more tender and less likely to tear during flipping.
🔹 The First Crepe Rule: The first crepe is almost always a “test run” to check the pan temperature and consistency. Don’t worry if it’s not perfect!
