Remember that $100 bottle of Volnay (or Pinot Noir) I used to break my 8-month sobriety? Well, it’s been sitting in the fridge for three days, and we’re doing a second tasting to see how it’s holding up. Spoiler alert: it’s already past its prime.

For those catching up, Volnay is an appellation in the Côte de Beaune subregion of Burgundy, France, known for elegant and aromatic Pinot Noirs. On day one, I gave this wine a 7.5/10. Today? It’s dropped to a 6.5/10.

🤨What Changed:

The color is noticeably less vibrant—already looking oxidized with that telltale dull red hue. The nose has completely transformed. Gone are the fresh floral notes (violet, rose) and tart red fruits I got on day one. Now it smells mature and raisined—classic signs of oxidation.
I’m picking up fig (which wasn’t there before), ripe dark cherries, and plum sauce instead of fresh plum. All the fruit flavors have turned mature and jammy. No vegetal components. No floral notes. Just fruit. And not in a good way.
The tannins, which were bold and mouth-drying on day one, are now soft and mild. The acidity is still mild, which is consistent with the first tasting.

🤔My Take:

I think this bottle peaked on day two. That’s when the tannins would have softened just enough, the fruit flavors would still be super intense and juicy, and the brightness would be at its best. By day three, it’s lost that vibrancy.
