Also, acorn squash work great for “stuffing” like this. You get more of the filling along with the squash, since the cavity to squash ratio is higher. I do it with wild rice, cranberries, mushrooms, goat cheese, and/or sausage and herbs and always serve with a salad and French vinaigrette 😋 goat cheese and walnuts are great on the salad, especially if not using them in the stuffed squash already
