This Tarte Tatin is one of France’s most iconic desserts — golden caramelized apples, buttery puff pastry, and a salted caramel that takes it completely over the top. I first tasted one as a child visiting friends in Alsace, and it was the dessert that made me fall in love with French pastry.

🍎 TARTE TATIN — SALTED CARAMEL APPLE TART
INGREDIENTS:
• 6–8 small apples
• 60g butter (caramel) + 20g butter (dish)
• 1 tsp cinnamon
• ½ cup sugar
• ¼ tsp salt
• 1 sheet puff pastry (homemade or store-bought)
INSTRUCTIONS:
1. Peel, core and quarter the apples. Toss with cinnamon and 2 tbsp sugar. Set aside.
2. Melt 60g butter in a saucepan. Add remaining sugar and salt. Don’t stir until it bubbles, then stir until honey-colored caramel forms.
3. Butter your pie dish generously with 20g butter.
4. Pour caramel into dish quickly — it hardens fast!
5. Arrange apple quarters in a tight circular pattern.
6. Top with a round of puff pastry, tucked in snugly at the edges.
7. Bake at 405°F for 30–35 minutes until golden.
8. Cool slightly, loosen edges with a knife, then flip onto a serving plate.
9. Serve warm with vanilla ice cream.
