French Onion Pasta🧅🍝
2 tbsp butter
1 tbsp olive oil
3 onions sliced
8 oz mushrooms
4 minced garlic cloves
Salt/pepper
1/2 dry white wine
2 cups beef broth
1 1/2 – 2 cups water
8 oz pasta
2 sprigs fresh thyme
1/2 tbsp balsamic
1/2 tbsp Worcestershire
1/2 cup heavy cream
1 cup Gruyère cheese
Parmesan and toasted breadcrumbs for garnish
Heat oil and butter over medium heat. Add onions and a pinch of salt. Cook on low for 30-40 minutes until the onions are caramelized. Make sure to keep stirring them every few minutes. Add in mushrooms and cook for 5 minutes. Add in minced garlic for 1 minute. Add in wine and simmer for 5 minutes until it’s cooked down. Add in broth, water and thyme. Bring to a boil, add in pasta and cook uncovered for 12-15 minutes. Once pasta is done add in Worcestershire and balsamic vinegar. Put heat on low and add in heavy cream and cheese. Mix until the cheese is completely mixed in. Season salt and pepper. Garnish with Parmesan and toasted breadcrumbs.
