Chinese spicy and sour shredded potatoes recipe 👇🏼👇🏼👇🏼
INGREDIENTS
– 400 grams of potato shreds
– 2 tbsp of white Vinegar
– Half bell pepper, cut it into shreds
– 2 pieces of spring onion
– Some ginger shreds
– 2 cloves of garlic, thinly sliced
– 4 pieces of hot dried chilies
– 1/2 tbsp of Sichuan peppercorn
– 1 teaspoon Salt
– 1 teaspoon sugar
– 1.5 tbsp of Chinese black vinegar

INSTRUCTIONS
1. You want to use healthy potatoes without any sprouts because sprouts are poisonous. Peel the skin of the potato and cut the potato into shreds.
2. Soak them in the cold water for 10 minutes. Add in 2 tbsp of white vinegar into the water. Water can remove starch from potato and vinegar will cause some chemical reaction and will change the texture of the potatoes.
3. Take out potato from water after 10 minutes and leave it in the sieve to get rid of any excess water.
4. Add 3 tbsp oil to your wok. You can use less oil if you prefer more healthy food. Add the Sichuan peppercorn in wok while the oil is still cold. Sichuan peppercorn will season the oil when the wok is getting hot. Fry the peppercorn for 30 seconds and fish out all of them. The reason why you need take it out is your tongue will feel numb when you accidentally bite Sichuan peppercorn.
5. Put all the aromatics into wok besides the green part of the spring onion. Give them a few quick stirs. Then, put all potato shreds into wok and give quick stirs because oil can coat the surface of the potato. That will prevent it from producing starch.
6. Season it with 1 tsp of salt and 1 tsp of sugar. Few more stirs then add 1.5 tbsp of Chinese black vinegar along with the green part of spring onion. Black vinegar provide more better flavour. You can use white vinegar for this recipe as well, white vinegar give better colour of the dish.
7. Keep stirring and mixing all the ingredients. When you see the potato shred becomes a bit softer, it means it is done. Take it out and serve.
