Rainy days call for French onion soup 🍲 I didn’t have any yellow onions so I decided to experiment with red and it still turned out yummy! Just have to add some sugar to get it sweet like yellow onions! Recipe below 👇🏼
🧅 French Onion Soup (made with red onions) 🧅
Serves 4
Ingredients
• 1000 g red onions, thinly sliced
• 3 tbsp butter
• 1 tbsp olive oil
• 1¼ tsp salt, plus more to taste
• 2 tsp sugar
• 3 cloves garlic, minced
• ¼ cup dry white wine
• 4½ cups (1,046 mL) beef stock
• 1 sprig thyme (or ½ tsp dried thyme)
• 1 bay leaf
• Black pepper
• 160–240 g Gruyère cheese, grated (40–60 g per serving)
Instructions
Melt the butter and olive oil in a large pot over medium heat. Add the sliced onions and salt, and cook slowly for 45–60 minutes, stirring occasionally, until deeply caramelized, soft, and jam-like. Add the sugar during caramelization to help develop sweetness and color.
Add the garlic and cook for about 30 seconds, then pour in the white wine and let it simmer for 2–3 minutes, scraping up anything stuck to the bottom of the pot.
Add the stock, thyme, bay leaf, and black pepper. Simmer uncovered for 25–30 minutes to let the flavors deepen. Taste and adjust salt if needed.
Ladle into oven-safe bowls or a mini cocotte, top generously with grated Gruyère, and broil until melted, bubbling, and golden brown, about 2–5 minutes.
Let rest briefly, then break through the cheese and serve.
Stores well in the fridge for up to 5 days and tastes even better the next day.
