French Onion Soup
⭐️Ingredients:
– 3 tbsp unsalted butter
– 3-4 large red or yellow onions (about 3Ibs), peeled and thinly sliced
– ¾ tsp kosher salt, plus more to taste
– 2 qt beef stock (8 cups)
– 1 cup dry white wine
– 1 tbsp dry sherry
– 1 tbsp all-purpose flour
– ½ tsp black pepper, plus more to taste
– 8-12 (½-in) slices French bread (from
1 loaf)
– 1½ cups grated Gruyère cheese
⭐️Preparation:
1. Melt butter in a heavy Dutch oven over medium heat. Add onions and ½ tsp salt, stir, and cover. Let onions soften for 5 min. Remove lid and let onions caramelize until golden brown,
stirring occasionally (about 45-60 min).
2. Meanwhile, warm broth in a saucepan over low heat.
3. Once onions are caramelized, add wine and sherry and bring to a boil.
Stir in flour and cook for 1-2 min until slightly thickened.
4. Slowly add warm broth, ¼ tsp salt, and pepper. Boil uncovered for 10 min.
Adjust salt and pepper to taste.
5. Preheat broiler. Arrange ovenproof casseroles on a baking sheet. Ladle soup into casseroles, top with bread slices, sprinkle with Gruyère.
Broil 1-2 min until cheese melts and browns.
