I’m sharing the actual meals I made from last week’s meal plan!! What’s for Dinner last week you ask?! Here is our menu this week for easy weeknight meals:

Beef & Noodles:
Butter Chicken: I doubled the sauce of this recipe, but omitted the chicken. I also pan seared 1 lbs of paneer. Just cube it up and slowly turn over melted butter to brown. Place paneer on rice, cover with the butter chicken sauce and enjoy!
Naan wedges:
Rice: Cook 1-to-1 ration of rice to water. Hit Rice button on IP. Release pressure manually or allow a natural release (depends on your schedule!). Fluff and enjoy! 3 cups is my maximum I make in my Instant Pot. Also, I use ALDI Jasmine Rice if that’s of interest to you!
Calzones –
Use this pizza crust (I doubled to make 7-8 large calzones)
Divide the dough and fill with cheese and traditional pizza toppings (soggy items like olives may make it soggy – a risk I am willing to take!)
Using an egg wash as “glue” fold calzone and wash entire exposed dough. Sprinkle with parmesan.
Bake at 375 for 17 minutes or until golden and “hard”. Spread with melted butter immediately.
Serve with pizza sauce on the side.
Vegan Drunken Noodles:
My Inspo Recipe:
(I made a triple sauce recipe, added carrots and made more noodles. I also subbed hoisin and honey in place of vegetarian oyster sauce and coconut sugar)
Homemade French Fries (to pair with Hebrew National Hot Dogs):
8 washed russet potatoes washed and cut (using this:
soak for minimum 30 minutes
drain potatoes and pat dry (I use two lint free towels, tea towels best)
Drizzle with EVOO, parsley, garlic salt, minced garlic & ground pepper (LOTS of each!)
Line cookie sheets with parchment paper. Bake for 20 minutes. Flip and Bake another 20 (or more if you want crispier). Sprinkle with course salt. Serve with fry sauce (ketchup & mayo mixed!)
Breakfast for Dinner:
I just made 2 sausage patties, 2 fried eggs and guac with a side of grapes! The rest of my family had pancakes again with strawberry rhubarb sauce.
