Another of Guillame’s pick of the month is Chateau D’Yquem
Château d’Yquem 1997 remains my most memorable sweet‑wine experience. The estate stands alone in Sauternes as the only Grand Cru Classé Supérieur, and its history is just as captivating as its wines. I have always been fascinated by Joséphine Sauvage d’Yquem, the remarkable woman who elevated the estate to legendary status.
I enjoy this wine very lightly chilled in a small white‑wine glass, allowing it to open gradually as it warms. It pairs beautifully with blue cheeses, spiced desserts and rich dishes. As a French person, I still love it with foie gras, even if that pairing is sometimes considered outrageous.
In the glass, Château d’Yquem 1997 shines with a radiant golden hue. The nose is wonderfully complex, offering dried exotic fruits, mango, quince, honeycomb, sweet spice and delicate floral notes. The palate is rich and opulent yet lifted by vibrant acidity, creating a balance of sweetness and freshness that feels almost weightless. The texture is silky and enveloping, deepening into candied citrus and warm spice as it opens.
