    For the Potatoes:

    Large Potatoes (peeled)
    Water (for boiling)
    Salt (for boiling)

    For the Slurry (Batter):
    Corn flour
    Red Chilli Powder
    Jeera (Cumin) Powder
    Aamchur (Dry Mango) Powder
    Garam Masala
    Salt (to taste)
    Water (to make a medium consistency batter)

    For Coating & Frying:
    Cornflakes (crushed)
    Oil (for deep frying)

    For Garnish:
    Chaat Masala
    Black Salt

    👩‍🍳 Instructions

    1. Prep the Potatoes:
    Wash and peel the potatoes. Cut them into the shape of French fries, but keep the pieces thick (chunks/wedges style). Do not slice them too thin!

    2. Parboil:
    Boil water with some salt in a pan. Add the potato strips and boil them for 2 minutes. Drain the water and set the potatoes aside.

    3. Make the Batter:
    In a bowl, mix corn flour, red chilli powder, cumin powder, amchur powder, garam masala, salt, and enough water to create a smooth corn slurry.
    4. Marinate:
    Add the parboiled potatoes to the slurry. Mix gently so they are well coated. Let them rest/marinate for 10 minutes.

    5. The "Kurkure" Coating:
    Take cornflakes and crush them into smaller crumbs. Take the marinated potatoes one by one and roll them in the crushed cornflakes until fully coated.

    6. Fry to Perfection:
    Heat oil in a deep pan. Deep fry the coated potatoes on medium-high heat until they turn golden brown and crispy.

    7. Season & Serve:
    Remove from oil and immediately sprinkle some Chaat Masala and Black Salt while they are hot. Serve with mint chutney or mayonnaise!
