  1. Yeah you can use Cointreau for the "flambé", and for the first one "the sad", you need just to wait the pan was hot ! and no more sad crepes (except if you like eating this one because the tax of the cooker 🙂

  2. it's a liquor of bitter orange. just the skin. Like Cointreau / triple-sec. And you can drink this in majority in cocktail, and for the cointreau we have here (in Angers 49, where it's from) : la soupe angevine. 1cl cointreau 6cl Champagne 1Cl pulco citron. it's like un orangina but with alcool !
