🥐 Classic French Croissant Recipe
Ingredients
3 cups (375 g) all-purpose flour
2 tbsp sugar
1½ tsp salt
2 tsp instant yeast
1 cup (240 ml) cold milk
250 g cold unsalted butter (for laminating)
1 egg + 1 tbsp milk (egg wash)
Steps
1️⃣ Make the dough
Mix flour, sugar, salt, and yeast. Add cold milk and knead into a smooth dough. Cover and refrigerate 2 hours.
2️⃣ Prepare butter slab
Place butter between parchment paper. Roll into a flat rectangle. Chill till firm.
3️⃣ Lamination (butter layering)
Roll dough into rectangle. Place butter slab in center. Fold like a book and seal edges.
4️⃣ First fold
Roll gently, fold into thirds. Wrap and chill 30 minutes.
5️⃣ Second & third fold
Repeat rolling + folding 2 more times, chilling 30 minutes between each.
6️⃣ Shape croissants
Roll dough thin. Cut into triangles. Roll from wide end to tip, curve slightly.
7️⃣ Proofing
Place on tray, cover lightly. Rest 2–3 hours till puffy.
8️⃣ Egg wash
Brush gently with egg + milk.
9️⃣ Bake
Bake at 200°C (390°F) for 18–22 minutes until golden and flaky.
