  1. Ingredients
    2 tablespoon olive oil
    boneless beef chuck roast
1 onion, chopped into thin strips
2 garlic cloves, peeled, chopped
2 packet dry onion soup mix potatoes (optional)
    carrots, peeled and cut
    4 cups water
    Instructions
    Add olive oil to the bottom of the slow cooker
    Place the roast and onions in the slow cooker and sauté
    Rotate the roast, sauté well on all sides and sauté onions until caramelized
    Add garlic cloves and carrots and sauté
    Sprinkle the onion soup mix, water and stir
    Place the lid on the slow cooker and cook on low for 8-10 hours or high for 4-6 hours

    Serve on mashed potatoes or add chopped potatoes with step 4.
