🌟 Healthy French Toast Casserole 🌟
One of my most requested recipes! I made this over the holidays for the family and it was a HUGE hit! Be sure to save this one 🤤
What you need:
– 1 loaf of your favorite bread (we used sourdough)
– 8 eggs
– 2 cups milk
– 1 cup plain Greek yogurt
– 1/4 cup maple syrup
– 1 1/2 tsp cinnamon
– 1 tsp vanilla extract
– 1/2 cup chopped pecans (optional)
Preheat oven to 350 degrees
Chop bread into cubes and place in baking dish.
In a large bowl, combine eggs, milk, Greek yogurt, maple syrup, cinnamon & vanilla extract. Mix well and pour over bread cubes. Be sure to evenly coat each cube in the batter.
Top with chopped pecans, if you wish! (I only did it on half of ours). Light drizzle of maple syrup over casserole.
Pop in the oven for 40-50 minutes. Keep an eye on it so the top doesn’t brown too quickly! Loosely cover with foil if needed.
Add your favorite fruit, maple syrup & ENJOY!
