FAST PUFF PASTRY + GALETTE DES ROIS 🇫🇷
This is a fast puff pastry technique.
No laminator. No long resting. Still flaky.
FAST PUFF PASTRY
• Flour 400 g
• Salt 8 g
• Water 320 g
• Butter 330 g (frozen, small cubes)
Mix flour, water, and salt just until combined.
It does NOT need to be smooth.
Add frozen butter cubes directly into the dough.
Give: • 2 double folds
• 1 simple fold
Rest in the fridge for 2 hours.
FRANGIPANE CREAM (GALETTE DES ROIS)
• Butter 100 g
• Sugar 100 g
• Almond powder 100 g
• Eggs 100 g
• Flour 40 g
• Cream 50 g
• Rum 4 g
• Vanilla 4 g
• Pastry cream 150 g
