From Delhi to Paris: A Curry With a French Accent!
This recipe was born over the Christmas holidays, cooking for family. What started as a lovingly spiced butter chicken quickly became far too hot for the little ones at the table. Instead of starting over, my sister improvised — reaching not for more cream, but for French technique.
A spicy, tomato-based North Indian–style chicken curry, softened and balanced with French béchamel and coconut cream — not to dilute the flavour, but to tame the heat and elevate the texture.
What began as a save became a signature. This dish is now part of our family recipe book. A true culinary fusion where Indian spice meets French intention.
Recipe
North Indian Style Spicy Chicken Curry
∙ Oil
∙ 1½ tablespoons Mild curry powder
∙ ½ teaspoon Hot curry powder
∙ ½ tablespoon Cumin seeds
∙ 3 Red Onions
∙ ½ teaspoon fennel seeds
∙ 1 tablespoon Kashmiri chilli powder
∙ 2-3 Green chillies
∙ 3 tablespoons Fresh ginger
∙ 3 tablespoons Fresh garlic (about 12 cloves)
∙ 1½ tablespoons Fine Coriander
∙ 2 tablespoons brown sugar
∙ ¼ teaspoon fine cloves
∙ 2 cans Tomato Puree (NOT PASTE)
∙ About 750ml water
∙ 1 Chicken stock cube
∙ Salt & pepper
French Coconut Bechamel sauce
∙ ¼ cup Butter
∙ ¼ cup flour
∙ ½ tablespoon dried thyme
∙ 2 cans Coconut cream
∙ Salt & pepper

Ek woon in Kstd maar grootgeword inni bosveld. Heeltemal vani punt af wil ek 'n opmerking maak. Ek kyk na die hout wat jy brand se wonderlike, wonderlike vorms dit het. Behalwe kook is my ander hobby bonsai. Meer spesifiek 'tanuki', kyk gerus na die hout wat hulle gebruik en kyk dan op ebay wat mense bereid is om te betaal vir dit. Kyk op youtube wat tanuki is. Die ouens wat erg is oor seevis tenks betaal ook deur hulle nekke vir hardehout met mooi vorms. Daai mense inni noordelike halfrond het nie sulke hout nie. As ek daar by jou was is dit wat ek sou doen. Sê maar net
