🥥 Valpapdichi Bhaji (French Beans – Goan Style)
🧾 Ingredients
French beans – 250 g, cleaned and finely chopped
Oil – 1 tsp
Onion – 1 medium, finely chopped
Potato – 1 small, peeled and finely chopped
Jaggery – a small piece (to balance bitterness)
Fresh grated coconut – 3–4 tbsp
Mustard seeds – ½ tsp
Turmeric powder – ¼ tsp
Coriander Powder – 1 tsp
Red chilli powder – 1 tsp (optional)
Salt – to taste
Water – 2–3 tbsp (if required)
🍳 Method
1. Heat oil in a pan and add mustard seeds. Let them splutter.
2. Add chopped onion and sauté until soft and translucent.
3. Add potato and cook for 1–2 minutes.
4. Add turmeric powder, Coriander powder, red chilli powder, and salt. Mix well on low flame.
5. Add French beans and mix thoroughly. Sprinkle a little water if needed.
6. Cover and cook on medium-low heat until the beans and potato are soft but not mushy.
7. Add jaggery and grated coconut. Mix gently.
8. Cook uncovered for 2–3 minutes until the bhaji turns dry and aromatic.
9. Switch off the heat and rest for a minute before serving.
