Chicken Francese recipe

Ingredients:
– ½ cup all-purpose flour
– 1 teaspoon salt (or to taste)
– ½ teaspoon pepper (freshly ground, or to taste)
– 3 large eggs
– ¼ cup vegetable oil
– 4 boneless, skinless chicken breasts (cut in half lengthwise)
– 1 large lemon (sliced into thin rounds, seeds removed)
– 1 cup low-sodium chicken broth
– ½ cup dry white wine
– 1 tablespoon freshly squeezed lemon juice
– 1 tablespoon all-purpose flour
– 2 tablespoons unsalted butter
– 2 tablespoons chopped parsley (for garnish)

Directions:
1. In a shallow dish, combine the flour, salt, and pepper. In another dish, beat the eggs until well mixed.
2. Take each piece of chicken and first dip it in the flour mixture, then in the egg, coating it thoroughly.
3. Heat the vegetable oil in a large skillet over medium heat. Add the chicken and fry until golden brown on both sides—about 5-7 minutes. Remove the chicken and set it aside.
4. In the same skillet, sauté the lemon slices for a minute or two until they’re fragrant.
5. Pour in the chicken broth and white wine, followed by the freshly squeezed lemon juice. Stir to combine.
6. Whisk in 1 tablespoon of flour and the butter until the sauce begins to thicken—about 3-4 minutes.
7. Return the browned chicken to the skillet and let it simmer in the sauce for a few minutes to absorb those amazing flavors.
8. Serve hot, garnished with chopped parsley for a beautiful finishing touch.
