Everyone thinks tartiflette is classic French alpine comfort food. It’s not.

This dish was invented in the 1980s by cheese marketers to sell more Reblochon and convince skiers they were eating something “traditional.” Marketing scam? Kind of. Delicious anyway? Also yes.

Onions, garlic, smoky bacon, potatoes, cream, wine, and a lot of melted cheese — none of that is bad. Confession: we were never Reblochon people. Stinky cheese isn’t our default. But after overwhelming requests… we ‘re here making it for you.

On a cold winter day? Hot potatoes + bubbling cheese absolutely hits.
