📏 YIELD & BAKING DETAILS
• Makes: 10–12 mini madeleines
• Pan: Madeleine mould
• Baking temperature: 170°C
• Baking time: 20minutes
• Rods: Both rods ON | ON fan (OTG)
🧾 INGREDIENTS
🥣 Dry Ingredients
• Maida / all-purpose flour – 100 g (¾ cup)
• Cornflour – 10 g (1 tbsp)
• Baking powder – 1 tsp (4 g)
• Salt – 1 pinch
🥥 Wet Ingredients
• Powdered sugar – 80 g (⅔ cup)
• Thick curd / vegan yogurt – 80 g (⅓ cup)
• Milk / plant milk – 40 ml (3 tbsp)
• Oil or melted vegan butter – 60 g (¼ cup)
• Vanilla essence – 1 tsp
• Lemon zest – ½ tsp (optional, bakery aroma)
🥣 METHOD
In a bowl, whisk powdered sugar and curd until smooth and creamy.
Add milk, oil, vanilla, and lemon zest. Mix well.
Sift in flour, cornflour, baking powder, and salt.
Gently fold to make a smooth, lump-free batter.
Grease madeleine moulds well and lightly dust with flour.
(If using silicone mould, greasing is optional.)
Transfer batter to a piping bag with round nozzle.
Fill each cavity ¾ full.
Bake at 170°C for 10–13 minutes until light golden and springy.
Cool 2 minutes, demould, and transfer to a wire rack.
🌟 TIPS
• Do not overmix after adding flour
• Always preheat oven 10 minutes
• Batter resting improves softness and shape
• For chocolate madeleines: replace 10 g flour with cocoa powder
• For jaggery version: use very fine powdered jaggery & strain batter
• For café shine: lightly brush warm cakes with sugar syrup or plant milk
