French Onion Soup recipe
Ingredients
6 sweet onions, thick sliced (pole to pole)
6 garlic cloves, diced
Rosemary, finely chopped
1/3 stick butter
1 tbsp olive oil
1 tbsp Worcestershire sauce
1/2 cup red or white cooking wine
2–3 tsp kosher salt (to taste)
Fresh cracked black pepper
3 tbsp all-purpose flour
64 oz beef broth
12 oz water
Gruyère cheese, shredded
Baguette slices (for topping)
Broth Level-Up (Optional but 🔥)
Simmer on low for 45–60 minutes, then strain.

3 tsp Better Than Bouillon (beef)
1 large carrot, diced
2 rosemary sprigs
2 thyme sprigs
3 garlic cloves, crushed
5–7 parsley sprigs
Adjust salt at the end
Method
1. Heat a large stainless-steel pot over medium heat.
2. Add olive oil + butter, let melt.
3. Add onions, salt, and black pepper.
4. Add 4 oz water, stir, cover for 5 minutes.
5. Uncover, stir, cover again for 5 minutes.
6. Repeat step 5 4 times (this speeds caramelization).
7. Remove lid and stir every few minutes to prevent burning.
8. Cook until deeply caramelized (45–60 minutes).
9. Add rosemary, cook 1–2 minutes until fragrant.
10 Stir in flour and cook 4–7 minutes.
11. Add wine, deglaze the pot, cook off alcohol (5–7 minutes).
12. Drizzle in Worcestershire sauce.
13. Strain hot beef broth into onions.
14. Simmer 15–20 minutes.
Finish & Serve
Ladle soup into oven-safe bowls.
Add shredded Gruyère.
Top with baguette slices.
Add more cheese.
Broil until bubbly and golden.
Rest 2–3 minutes and enjoy hot ⚠️ (it’s lava).
