In France, starting on January 6, everyone eats Galette des Rois — a puff pastry cake filled with almond cream.
For the entire month of January, it’s shared at home, at work, and with friends.
Inside the cake, we hide a small figurine called a fève. Whoever finds it becomes king or queen for the day and gets to wear a paper crown 👑
Traditionally, this cake can take a long time to make — but this version keeps all the flavor and tradition and is ready in about 40 minutes.

🧂 Ingredients
100 g powdered sugar
75 g soft unsalted butter
140 g almond powder
2 eggs
1 tsp almond extract
1 tsp vanilla extract
2 puff pastry sheets
1 egg yolk (for brushing)
1 fève (optional)
🍳 Instructions
Mix almond powder, sugar, butter, eggs, almond extract, and vanilla.
Place one puff pastry in a pie dish and pierce with a fork.
Spread filling evenly with a spatula. Insert the fève.
Cover with second pastry, seal edges, and trim excess.
Score the top decoratively and brush with egg yolk.
Bake at 395°F (200°C) for 30–35 minutes, until golden.
Serve slightly warm. Whoever finds the fève is king or queen 👑
