One of my husband's favorite desserts, this is not the king cake from New Orleans! This Galette des Rois is traditionally enjoyed on January 6 (Ephiphany or Twelfth night), but you can find them in bakeries starting in December. It is a puff pastry filled with frangipane (an almond cream). There are other traditional cakes served around the world to commemorate the visit of the 3 wise men to the baby Jesus. Maybe we will make one of those next!
