Day 3 of my 12 Days of Christmas baking series 🎄
Instead of three French hens, I made French Onion Brie Bites.
These are buttery, flaky, savory, and feel fancy without being fussy—perfect for holiday parties or a cozy night in.
French Onion Brie Bites
(makes about 18–24 bites depending on cutter size)
Caramelized Onions:
2 large onions, thinly sliced
1–2 tablespoons olive oil
Salt & pepper, to taste
1–2 teaspoons brown sugar
Cook onions low and slow in olive oil with salt, pepper and brown sugar until deeply golden. If it gets too dry add a little water and keep cooking. It can take up to an hour, so be patient.
Puff Pastry:
1 sheet store-bought puff pastry, thawed
Roll the pastry slightly thinner than it comes. Cut into individual bites with a 2″ or 3″ round cookie cutter. I used the fluted edge of my cutter for a little extra charm.
Bake at 350°F for about 20 minutes, keeping a close eye on them. You want the pastry fully baked through—deep golden and very crisp. Ovens vary, and I bake in a commercial convection oven, so adjust as needed.
Once cool enough to handle, add:
A small chunk of brie to each pastry round
A spoonful of caramelized onions
Return to the oven for 2–3 minutes, just until the brie melts.
Toppings (optional but recommended):
Fig jam (our favorite—adds a funky, sweet contrast)
Sweet chili sauce or Pepper Jelly
I buy my fig jam at Trader Joe’s, and between the two toppings, fig jam won us over.
