As coloured person from south African I was laughing at cauliflower and white sauce, cheese dish because it's a normal Sunday lunch dish…. Brit here that has lived in the US for many years now. Loved the recipes, especially the orzo. I am a convert of French onion soup (which I first tried not long after moving to the US) so the orzo could be a winner. Now on to the two British staples. Cauliflower cheese was the first thing I ever cooked – at secondary (high) school at the age of 11. Hated cauliflower at the time. But with the passage of time I've grown to like it. Hey anything covered in cheese sauce is a winner. Now on to the roasties. Yes, Americans do not have roast potatoes in their repertoire (much as they don't have Heinz baked beans believe it or not). We cook these up for Thanksgiving when friends invite us over, and they go down a treat. Duck fat or goose fat is rather gourmet in my opinion (but absolutely nothing wrong with that). We used to recycle old cooking oil to use with the roast potatoes – the "economy" version of the dish. Roast potatoes are a game changer for any American that hasn't tried them. Far superior to mashed potato.

An upgrade to the cauliflower cheese…. Bacon and spring onion (or green onion as you call it)
I use diced smoked bacon lardons or pancetta. In a pan on low heat to render the fat until starting to brown. Add sliced spring onions until soft and then add the butter and flour and continue as normal
Sides are not the devil. Sides are essential for the civilized. We want variety with our meal. Cannot eat cauliflower. It's disgusting and should be banished off the face of the earth. The cheese sauce looks sumptuous. The French Onion Orzo looks amazing. I've never heard of this. I'll make this. A New Fan! Merry Christmas!

Yeah cauli cheese, you can make it into a full dinner so easily, Add some brocolli to the bake (or steam both veg), boil some robust pasta – penne or similar, until al-dente. Toss it all in the cheese sause – add a can of tuna or two – and top with sliced tomatos and more cheese. Bake until lovely – maybe 20 mins in an air fryyer or 30 mins in the regular oven.
