  2. This is absolutely true. Earlier this year a Copenhagen restaurant got a star after being open for 42 days.
    Michelin has lost its value.

  3. Consistency is the thing, as quality is easily copied. The cooking techniques are transfered over far more chefs, so many more cook at the olden day Michelin standard.
    That's why it's confetti… otherwise you have to raise the bar further.
    Also, these days there are far more restaurants, obviously.

  5. To be fair that's exactly how he got his stars. Very fast after opening. So this has been going on a long time

  6. Michelin stars are only as powerful as their relevance. The reason they throw them out like confetti, is because they only hold power so long as people believe in them. It's just like money. We all collectively decide that a piece of paper has value. If Michelin is extremely reserved about giving out stars, then restaurants and their guests will just stop giving af about them. Michelin has gone so ridiculous, that they started giving away accolades to mobile food carts, as well as street vendors.

  7. Mine is a provocatory comment, meant for personal insight and sincere deeper understanding: in a world that struggles with harmony and even fair distribution of food, why are we still giving a darn about michelin stars? It feels so nautiously pretentious.

  8. Back then it was pure cooking, no kitchen technology. It's like working in a hospital in modern michellin kitchens. Although chefs nowadays are geniuses compared to back then.

    Hard to argue with him on that last bit. To get an award as a chef not behind a stove, you better make good sushi.

  10. Everything is given out easier today. Standards have fallen. People are catering to the lowest common denominator.

  12. Michelin gave a Star to a taco truck in Mexico that only serves steak tacos with no toppings or salsa. What a joke
