Duxelles is a finely minced mixture of mushrooms, garlic, and shallots with herbs (in this case, thyme), black pepper, and white wine/vermouth/sherry, which is cooked in butter and reduced to a paste. It is said to have been created in 17th Century France.

What you will need for this recipe:
8oz mushrooms, finely minced
1 medium shallot, finely minced
3-4 heaping T of minced garlic
3/4 tsp thyme
4 turns of a black pepper mill
1/4 c. white wine/vermouth/sherry
2T. butter
