📌 BROWN BUTTER ATTA COOKIE FRIES (EGGLESS)
Serves: 20–22 cookie fries
Prep Time: 25 minutes
Cook Time: 15–18 minutes
Ingredients:
Brown Butter:
• Unsalted butter – ¾ cup
• Water – 1 tbsp (added after browning)
Sugars:
• Light brown sugar – ¾ cup
• White sugar – ¼ cup
Egg Replacement:
• Thick curd – 3 tbsp
• Cornflour – 1 tbsp
• Milk – 1 tbsp
• Baking soda – ⅛ tsp
Dry Ingredients:
• Whole wheat flour (atta) – 1¾ cups
• Baking soda – ¾ tsp
• Salt – ¾ tsp
Mix-ins:
• Mini chocolate chips – ½ cup
Optional (highly recommended):
• Milk powder – 2 tbsp
• Rice flour – 1 tbsp
Kiki’s Tips:
• Atta dries faster, don’t skip the added water after browning butter.
• Chill before cutting, otherwise fries will break.
• For sharper edges, freeze shaped fries 10 mins before baking.
• Centres firm up as they cool — don’t overbake.
Substitutions:
• No milk powder → skip, but texture will be slightly firmer.
• No rice flour → use cornflour 1 tbsp.
• Chocolate chips → chopped dark chocolate works.
Storage:
• Airtight container – 3 days at room temp
• Refrigerate up to 7 days, reheat lightly before eating
