Ingredients

Macaron Shells

100 g almond flour (very fine)

100 g powdered sugar

70 g egg whites (about 2 large eggs), room temperature

70 g granulated sugar

Gel food coloring (optional)

1️⃣ Sift almond flour + powdered sugar
2️⃣ Whip egg whites, add sugar → stiff glossy peaks
3️⃣ Fold dry mix into meringue (lava-like batter)
4️⃣ Pipe small circles on tray
5️⃣ Tap tray, pop air bubbles
6️⃣ Rest until tops are dry
7️⃣ Bake at 150°C / 300°F – 15 min
8️⃣ Cool, fill, sandwich, chill
