Step inside one of New York City’s most unique Michelin-starred restaurants, FREVO, hidden behind an art gallery in Greenwich Village. In this exclusive behind-the-scenes “day in the life”, we follow Chef Franco Sampogna and his team from morning prep all the way to dinner service as they build their iconic 10-course tasting menu ($245 per person).

This is an intimate look at how a world-class culinary team operates — the precision, the creativity, the discipline, and the passion that define modern fine dining in NYC.

What we filmed in this episode:

• Australian Wagyu Testing
Watch Chef Franco evaluate a new Wagyu supplier as he tests marbling, tenderness, fat quality, and flavor to decide whether it’s worthy of being added to FREVO’s future menu.

• Breaking Down Young Sea Bream
We capture the full breakdown of a pristine sea bream for FREVO’s signature sweet nori dish — layered with trout roe, peppers, and a delicate balance of sweet oceanic flavors. In this episode, the team tweaks the bite for their upcoming menu launch.

• Selecting White Alba Truffles
Learn how Michelin chefs choose the perfect White Alba truffle straight from Italy. From aroma to texture to structure, the truffle supplier walks us through the process.
Then watch the team create an elevated dish featuring Hokkaido scallops, Koshihikari rice, and a silky white pepper sauce.

• Meet the Team Behind FREVO
Go inside the tiny, highly organized open kitchen and meet the chefs, cooks, and service staff who keep this restaurant running with flawless choreography.

• Non-Alcoholic Pairing Breakdown
Their sommelier walks us how we prepares a beetroot black tea based pairing, the philosophy, flavor structure, and how these beverages enhance the progression of the tasting menu.

• Full Menu Reveal
Stay until the end for the complete look at the dishes served in the evening’s 10-course tasting menu.

  1. Cool restaurant guys! I’ve seen restaurants and bars tucked away in the most interesting places… behind fridges, vending machines… a Michelin restaurant behind a painting is pretty cool!

  2. Chef Sampogna's absolutely right about using humble ingredients to delight customers. When I hear other people talk about Frevo, it's that Frevo's underrated, and that they didn't expect a vegetable dish to be more delicious than the meat dishes. This place deserves more attention.

  3. Really cool vid! Have you guys done Indian Fine Dining yet? There's Gymkhana in London but a new one in Vegas just popped up
