This authentic French Potato and Onion Soup is proof that you don’t need fancy ingredients to make something incredible. My mum actually learned this technique back when she was going to school in France, and it is a total game-changer. She insisted I must upload it, as she loves simple quick meals. So here it is.

By simply blending the caramelised onions and potatoes, you get this rich, velvety texture without needing any heavy cream at all. It’s cheap, quick, and feels like a warm hug on a chilly evening. But the real secret? Stirring in a handful of cheese at the end makes it absolutely incredible, while a sprinkle of fresh parsley cuts through the richness. And definitely don’t skip the olive-oil croutons, they add that perfect, crunch, and don’t eat them all prior!
