These Caramelized French Onion Brie Puff Pastry Bites are the kind of appetizer that disappears fast at every Thanksgiving table. Buttery puff pastry, creamy brie, and sweet balsamic onions come together in one perfect bite. You can make them ahead, reheat easily, and they look (and taste) like something straight out of a bakery.

Ingredients:
– 1 sheet puff pastry, thawed according to package instructions
– 3-4 onions, thinly sliced (mandoline works best)
– 1 tbsp balsamic vinegar
– 1 tbsp brown sugar
– Salt, to taste
– 1/2 wheel of brie, cut into bite-sized pieces
– 1 egg + splash of milk (for egg wash)
– Sesame seeds (optional)
– Fresh thyme, for topping

Instructions:
1. Caramelize onions: In a pan over medium heat, cook sliced onions with salt until soft. Add balsamic vinegar and brown sugar, then cook until deeply golden and reduced. Let cool.
2. Prep pastry: Cut puff pastry into rounds. Score a smaller circle in the center (don’t cut through). Brush with egg wash, sprinkle with sesame seeds, and bake at 400°F for 8–10 minutes until puffed and golden.
3. Assemble: Once cooled, gently press the centers down with a spoon. Add a spoonful of caramelized onions, top with a piece of brie, and finish with fresh thyme.
4. Final bake: Return to the oven for 5 minutes until the brie melts.

Tip: if your brie sticks to the knife, just rub a little oil on it before slicing!

  1. These look amazing..im not sure why id think some jam/preserves would taste amaxing with this..apricot jam..caramelized onionnand goat cheese or brie? Bacon deserves love maybe try 3 different ways… i dont eat carbs so i will find a way to make a keto pastry for the bottom. Ty for the inspiration!!
