My opinion as a Chef, is that while Fine Dining may be more fancy; it is also less authentic. The main difference between a Cook and a Chef is that the former is a job one can get and learn, but the latter is a lifestyle. A choice to dedicate yourself to making every single dish you make the best it can be; not for pride, not for money, but because a good dish makes you happy… conversely a single mistake can have drastic consequences depending on its severity(never piss off a Chef in their kitchen).

Hands down, street food. My wife, girlfriend at the time, was aghast when a couple of friends and I took an American visitor to a hole-in-the-wall restaurant in Beijing that served some of the best lamb shish kabob (串 chuàn). He enjoyed that more than if we had taken him to a fancy Beijing (aka Peking) Duck restaurant, me, too.
