In keeping with our France Advent Week at Weinskandal, today’s recommendation comes from a true icon of the natural wine world. Choosing wasn’t all that easy for him: having grown up in South Africa and New Zealand and now calling France home, quite a few culinary worlds come together. One thing, however, is certain: the story of Weinskandal began with a wine from Matassa. So we couldn’t resist asking Tom Lubbe about a classic French Christmas dish and which of his wines he would pour alongside it.
