Ingredients:
• Water: 1 cup (220 ml)
• Fresh yeast: ¾ tsp. (3 g) or dry yeast: ½ tsp. (2 g)
• (Optional) Sugar: 1 tsp. (4 g)
• Bread flour: 2 ½ cups (320 g)
• Salt: 1 tsp. (6 g)
Ingredients for French Toast (makes 6 toasts)
– 2 eggs
– 1 cup milk
– 1 tsp cinnamon powder
– 1 tsp vanilla extract
– Optional: You can add 2 tbsp sugar but I prefer not to so that I can use naturally sweet maple syrup
Instructions:
– mix your ingredients together. Do not knead the dough. Let it rest for 20 minutes.
– dip your hands in water and lift and fold the dough from all 4 sides. Rest and cover for 20 minutes. Repeat this step one more time.
– after the second lift and fold, rest for 1 hour or until doubled in size.
– Roughly form a rectangular shape and fold from the top until it looks like a fat caterpillar.
– rest in your baking tray or dish for 30 minutes. Dust with flour.
– preheat your oven to 450F or 220C and bake for 30 minutes.
– Prepare your french toast mixture and dip your bread slices twice on each side but don’t dunk completely so that it’s soaked and sponges everything.
– Cook with butter on a medium heat and serve with maple syrup and butter.
