I absolutely refuse to cook or eat mashed potatoes that do not have lumps. Creamy, smooth mashed potatoes are baby food. I have teeth. I want to EAT my potatoes. The lumps don't mean undercooked. It just means there is some toothsome texture to enjoy some part of the potato that is not homogenized into the rest.
Also, I absolutely do leave the skins on while cooking, and enjoy them as part of the true potato texture and flavor when eating.
Good grief if you are unable to cook chips or make good mash potatoe then you need to think of another career. I really basic cooking and I mean basic
