Ingredients
• 200g smoked chicken (or ham/bacon), diced
• 170g frozen peas
• Fresh parsley, chopped
• 70g Boursin (Garlic & Fine Herbs)
• 2 egg yolks
• 4 whole eggs
• 60g cornstarch
• 150ml heavy cream
• 200ml milk
• 1 tsp salt
• ¼ tsp black pepper
Instructions
Preheat oven to 350°F (180°C). Grease baking dishes.
Crisp the smoked chicken in a skillet; set aside.
Combine peas, chicken, and parsley; divide between dishes.
Whisk Boursin and yolks, then whole eggs. Add cornstarch, cream, and milk. Season.
Pour custard over filling.
Bake in a water bath for 25–30 minutes.
Cool for 5–10 minutes and serve warm.
