    280g Plain Flour
    2 tsp Cinnamon
    1 tsp Ground Ginger
    Pinch of Nutmeg
    240g Brown Sugar
    60ml Vegan Butter
    60ml Oil
    2 tsp Vanilla Extract
    1 tsp Baking Soda
    1 level tsp Baking Powder
    ½ tsp Salt
    3–4 eating apples, chopped
    100g Coconut Yoghurt

    Method
    1. Preheat the oven to 180°C (350°F). Line a Swiss roll tin or cookie tray (about 25×35 cm) with parchment paper.
    2. Melt the vegan butter and mix it with the oil, brown sugar, vanilla, and coconut yoghurt in a large bowl. Whisk until well combined
    3. In a separate bowl sift together the flour, cinnamon, ginger, nutmeg, baking soda, baking powder, and salt.
    4. Add the dry ingredients to the wet mixture and stir until you see no dry floury bits.
    5. Fold in the chopped apples
    6. Spread the mixture evenly into the prepared tray, pressing it into the corners and smoothing the top.
    7. Bake for about 25–30 minutes, or until golden and a knife inserted in the centre comes out almost clean. You still want them a bit fudgy!
    8. Cool before slicing into squares or bars.
