Slow caramelized onions, a splash of white wine, melted cheese, and crispy baguette – this French Onion Soup is pure comfort in a bowl.
Perfect for cozy evenings, when all you want is something warm, rich, and aromatic.
Ingredients:
– 2.2 lb onions (1 kg)
– ¼ cup butter (60 g)
– 1–2 celery stalks (optional)
– 4–5 fl oz dry white wine (100–150 ml)
– Chicken broth, added in stages:
1 cup (250 ml), then
1 cup (250 ml), then
1⅔ cups (400 ml)
– 5–7 thyme sprigs (or 1 tsp dried), leaves only
– Baguette
– 1½–2 cups grated Gruyère (150–200 g)
Directions:
1. Melt butter over medium heat. Add onions (and celery if using).
2. Slowly caramelize until deep golden-brown, 20–35 min, stirring occasionally.
3. Add white wine; cook until fully evaporated.
4. Add broth in stages: pour in 1 cup, simmer until thick enough that a spatula leaves a clear trail.
5. Add the second 1 cup, reduce again to the same “trail” consistency.
6. Add the remaining 1⅔ cups, bring to a gentle boil, then simmer to a medium thickness (no trail now, but not watery).
7. Stir in thyme leaves, season with salt and pepper.
8. Ladle into oven-safe bowls, leaving ~½ inch (1 cm) headspace.
9. Top with cheese → toasted baguette → more cheese.
10. Bake at 200°C / ~390–400°F until the cheese melts (not boiling).
11. Finish with fresh thyme and serve hot.
