150g double cream
1 vanilla pod
5 egg yolks
45g caster sugar
15g cornflour
Whatever you do don’t boil this custard unless it’s sweet scrambled egg you’re after! 🤔

Why have I been spending so much money buying tinned custurd which barely has any flavour when it's so simple to make it myself! Talk about a fool & his money are easily parted. Well this fool has been educated! Lol Thanks for this simple guide.
Followed everything but my custard didn’t thicken
I found you can get the same results if you just add the beaten egg into the rest of your ingredients right at the scalding temp. This does require patience to master because many things can go wrong, but I think it’s something everyone should learn because of how much time it saves keeping your mixture cooking consistently. I haven’t tried this with regular milk and cream, because I am lactose intolerant. I found that oatmilk works perfectly for this, as long as you cook it down to the right moisture level. Great video!
Can you freeze it and eat as ice cream?

For the record the flavor DOENSY come from the beans they do nothing it’s all in the pod. Nothing else has the flavor and also a custard tends to burn off a lot of the vanilla flavor so it helps to add a little more vanilla extract after you’re done cooking when it chills

No cornflour is needed. Cornflour is cheating.

I advise putting the vanilla in some alchohol (amaretto for example) overnight, before adding it to the cream.
