A German Kartoffelsalat has to be schlonzig. What does that mean? It’s a sensory mark of approval that properly cooked potatoes have been mixed with the correct amount of hot stock at the right temperature so that they soak up all of the flavours without turning into mush. When used for food, schlonzig describes an ideal consistency for a creamy starchy dish like risotto… or a potato salad. It’s also what a Swabian grandma would use as an undebatable excuse when one questions her adding yet another tablespoon of vegetable oil.

The problem with potato skin is that it contains a poison. It's called solanine. So don't eat too much of it and don't give it to children.
I don´t understand why people do this it is the most horrible way to eat potatoes I have ever seen I have tried it once and never again the vinegar makes everything nasty
Best is: cooked potatoes, peas, carrots, and diced fresh cucumber pickles in salt, mayonnaise, salt, peper.. done. Best like this. Helmans mayonnaise best for this
boiling removes a lot of potato-flavor… roast them, skin-on, for the best results!

Guys, where in Germany is that potato salad recipe from? I ask because I see so many different recipes, but yours is the potato salad I've known since I was a kid!
I'm German and I've never seen a Kartoffelsalat anything like that. Maybe there's regional differences? Doesn't look bad, just not what I was expecting
My favourite (even though I add a bit of broth). My neighbour’s late mother worked in a restaurant in our town from the 50s-80s and her potato salad was legendary, some people still talk about it. He told me about her secret ingredience: half a bottle of light beer as a finish. I like this very much – and it makes “the” German dish probably even more German 😅

How is this salad
I will say as a American with German heritage. I love making this potato salad. The one thing I do differently is adding minced garlic and a little bit of nutmeg to that cooked seasoning mix, plus we use red onions for a more powerful flavor and color. We are also a lot heavier on the pepper. also my family adds a little bit of vinegar once the final stir is ready. And of course make sure to top the salad bowl with fresh chives and paprika after cold stirring.

This kind of German potato salad is only found in the south of Germany. The rest of Germany does a traditional potato salad with mayonnaise and not a sour dressing like this.

I have to say that this humble dish was hands down the consistently good dish i had all across Munich when I was there. Just hits differently and better than the American potato salad.
