I used this method to make my Christmas roast once! Worked a treat!!
AND I know a secret to hollow out the breast skin without using a spatula or fingers! The trick is to open the skin under a tap of running water and let the water do its job! BUT DON'T let the water run too fast!

He bruised the herbs cutting them like a barbarian all the flavours bleed out on the board, didn’t rest his chicken either, his herbs on the outside burnt as well. If you wanna do this sear the chicken bottom and thighs first and then roast at 180 for 45 mins in the same pan it will be less dry and herbs won’t be burn and breast will almost slide off the bone with crispy skin. Also let the chicken rest 10 mins minimum
