How any person pours their beer all depends on whether that person likes a head on their beer or whether they don't like a head on their beer. I Don't like a head on my beer so I tilt my glass so their is no foam at all so that is the right way for me.
Can't do that with a proper Belgian Ale. It would immediately overfoam, and keep overfoaming for many minutes. If you go to a bar in Belgium, they lie the glass down (each beer has its own glass), then the glass and allow the glass to be slowly and gradually filled.
Ideally, you want a mix of the two methods if your glass is large enough. First you pour down the side of the glass so no foam forms, and then you pour the rest at a 90 degrees angle to create a large foam head that traps carbonation and tastes good. This is the bar way
