Think French onion soup meets pasta night. The onions cook low and slow with butter and thyme until golden and jammy, then you build the sauce right in the same pot. Pasta, broth, melty cheese, a splash of cream—it’s the ultimate weeknight dinner for a cozy night in.

YOU’LL NEED
-3 T unsalted butter
-2 large onions, thinly sliced
-¼ tsp kosher salt, plus more to taste
-¼ tsp black pepper
-4 cloves garlic, minced
-1 T chopped fresh thyme
-½ c dry white wine (like Sauvignon Blanc)
-1 T sherry vinegar
-1 T Worcestershire sauce
-1 tsp Dijon mustard
-8 oz rigatoni or similar pasta
-4 c low-sodium beef broth
-1 c shredded Gruyère (about 4 oz)
-¼ c grated Parmesan
-¼ c half-and-half or cream

Melt butter over medium-low, then add onions, salt, and pepper. Cook until dark, golden, and jammy, about 35–45 minutes, stirring occasionally. Add garlic and thyme, cook 1 minute. Stir in wine and vinegar to deglaze, then add Worcestershire and Dijon. Push onions to one side, add pasta and broth. Bring to a simmer, cover, and cook 15 minutes, stirring occasionally, until pasta is al dente and most liquid is absorbed. Stir in Gruyère, Parmesan, and half-and-half until smooth and creamy.

  2. I’d personally cook the pasta separately at least 2/3rds of the way then add it. Will make the dish less starchy and stodgy and just taste a lot cleaner

  3. All dishes youtube proposes are just ancient dishes of Catalan cusine. All you imagination can create was invented 1000 years ago by Catalans. Do not even try it. For this reason is number 1 food in the world, by far.
