Ingredients:
In this recipe I used 5 large red onions, but you can also use yellow onions, use what you like and prefer ❤️
2 tbsp butter
2 tbsp olive oil
1 tsp salt
1 tsp pepper
1 liter beef broth (=5 cups)
1 tbsp Worcestershire sauce
splash of soya sauce
1 carrot cut in two, and sliced thin
1 small bunch parsley
1/2 cup Gruyere cheese
3 clove garlic, cut in half
1 small french baquette (cut into 1/4″ pieces)
Method:
Cut the onions in two, then slice them into thin pieces, separating everything into a bowl. Let them rest for 10 min
Put the beef broth into a pot, then add the Worcestershire sauce, soya sauce parsley and carrot. Cover and simmer for 1 hour.
Place the butter and olive oil into a second pot, then add the onions. I like using high heat to get them to sweat down quickly, then turn down the heat to low and let them deglaze slow. This can take 30 mins
Once the above are cook, place a sleeve over the onions, then pour the beef broth mixture over them
Slice as many pieces of baquette you need and toast them in the oven on broil
Once toasted, give each a rub down with the sliced garlic
Fill a “broiler safe soup crock” 3/4 full, add some of the shredded cheese then the sliced baquette then more cheese. Place this under a boiler for 2-5 mins, keeping an eye on it.
